Material for the top:

  • 320 grams of caster sugar;
  • 220 g butter with at least 82% fat;
  • 4 eggs;
  • 180 grams of white flour;
  • 90 g of good quality cocoa;
  • 10 grams of baking powder;
  • 1 teaspoon bicarbonate;
  • 1 teaspoon vanilla extract;
  • 1 pinch of salt;

Cream Ingredients:

  • 5 egg yolks;
  • 100 grams of white flour;
  • 500 ml of milk with 3.5% fat;
  • 200 grams of caster sugar;
  • 1 teaspoon extract or a stick of vanilla;
  • 150 g of cream for whipped cream;
  • pitted cherries 300 g;

Preparation method:

In a larger bowl, add eggs, sugar, salt, and vanilla extract. Beat until the sugar melts and you get a consistent foam.

Then melt the butter, add the cocoa and mix. Then a homogeneous composition of cocoa and butter, put in the bowl where you beat the eggs, then homogenize and add flour mixed with baking powder and bicarbonate.

After mixing well, from the container, put the dough into a baking sheet that has been lined with parchment paper, preferably a diameter of 20 cm, then put it in the oven at 180 degrees for 30-32 minutes. Do not bake too long because it will become chewy. Remove from the oven, let it rest for another 5-10 minutes in the pan, after which you can remove it to a wire rack and let it cool completely.

For cream, mix egg yolks, 100 ml of milk, flour and vanilla extract.

Put the remaining milk in a saucepan with the sugar and stir until the sugar dissolves. When it boils, pour in the egg yolk mixture and mix well, pour back into the saucepan, through a sieve and reduce heat. Keep stirring until all the flour is dissolved. Simmer like this over low heat for about 10-12 minutes, then let it simmer and refrigerate for at least 2 hours.

Cut the top into 3 equal parts. Divide cream and cherries in the same way into 3 equal parts. Spread the cream on each top, then put the cherries, the top, then the cream again, the cherries and continue with the last section in the same way. Refrigerate for a few hours and then it is ready to serve.
