Pear cakes are absolutely delicious and you don’t have to be a pro to follow the recipe below. To get the most aromatic tart, you should choose the sweetest pear with the texture you like best. Otherwise, you just need to prepare the recipe step by step, and in the end you will be able to enjoy the perfect pear cake.

200 gr wheat flour
125 gr butter
5 g sugar

4 large pears
Preparation method
For the top, we’re going to put the ingredients in a food processor for about 1 minute. We can also do this by hand, until we get a homogeneous dough, which we cover with food paper and put in the refrigerator.
For the filling, beat egg whites with sugar until foamy. Then, add the egg yolks, vanilla sugar and flour. Grease a 26 cm cake pan with a removable bottom with oil and cover with flour.
We remove the dough from the refrigerator and roll it out with a rolling pin, put it on a tray and throw away the excess. Pour the filling over it. Cut the pears into slices and place them on a tray, on top of the filling.
In the preheated oven, place in the tray and leave on a higher temperature for the first 20 minutes, then reduce to medium heat. When it is cooked, remove the tart and let it cool.
