As you’ve grown accustomed to since watching the Super Neatza matinee, on Fridays the set of desserts cooks up, both for matinee fun and to use as weekend recipe inspiration. In the beloved event of the June 17, 2022 issue, Vlăduț prepared a recipe for an amazing Pavlova cake with berries and pistachios.

This is a special cake both in taste and appearance. And if you want to prepare it yourself and treat your loved ones with it, below we offer a complete list of ingredients and the necessary steps for the preparation method.

Pavlova cake with berries and pistachios – Ingredients

You will need ingredients for the meringue top and ingredients for cream and decorations.

For 2 meringue tops with a diameter of 24 cm:

  • 12 whites from medium eggs
  • 630 g powdered sugar
  • pinch of salt

For cream and decoration:

  • 200 g raspberries
  • 200 gr blueberries
  • 50-60 grams of powdered sugar
  • juice of 1/2 lemon
  • 400 gr whipped cream
  • 2 teaspoons pistachio liquor
  • 100 g red currant
  • 50 gr chopped pistachios
  • 100 grams of raspberries

Pavlova cake with berries and pistachios – Method of preparation

Vlăduț recommends that we prepare the top of the meringue the day before, as it requires a long baking and cooling time.

How to prepare meringue tops

Place 12 egg whites in the bowl of a mixer and sprinkle a little salt on top. Then mix vigorously until they become crystals. Add, gradually, powdered sugar, in three stages. Mix continuously after each part of the sugar is added until a perfect meringue is obtained. In the end, when the meringue becomes hard, it is divided into two equal parts.

Spread both sides of the meringue in a cake form lined with parchment paper. Then baked at a temperature of 130 degrees Celsius with ventilation for 2 hours 30 minutes. Let it cool slowly in the oven with the door open.

How to make berry cream

Place the raspberries, blueberries, and sugar in a blender container and the process turns them into a consistent, beautifully colored sauce. Optionally, the fruit sauce can be passed through a sieve.

Beat cream until firm, then mix with fruit sauce. Whole red currants are also added, for extra flavor and fun effect, and pistachio liqueur for extra flavour.

The cream obtained will spread between the tops of the meringue, but also a little over the top. Refrigerate the Pavlova cake for 2-3 hours, then garnish with pistachios, fresh raspberries and red currants. Share it with a knife with a thin, well-sharpened blade and enjoy it happily, together with your loved ones.
