A simple recipe for preparing a dessert that can only surprise your guests. A little serious, a little provocative, the mojito cake will please everyone!
300 gr dry biscuits
150 gr melted butter
300 grams of cottage cheese,
150 ml of fresh cream,
130 grams of sugar,
40 grams of rum,
8 g gelatin, mint leaves

1. The first step is to crush the biscuits with a mixer. Add melted butter over the crushed biscuits and turn the mixer back on. Use this compound to line a rectangular springform pan with a removable base measuring 35 x 11 cm. If you prefer a different shape, that’s fine, just make sure you have enough biscuits to form a fairly thick (1-2cm thick) cake base according to the source.
2. Soak the gelatin in cold water for the time indicated on the package (about 10 minutes). In a bowl, mix cottage cheese (preferably cream cheese), granulated sugar, 12 finely chopped mint leaves, zest of 1 lime and the juice of 3 strained limes. Stir until all ingredients are perfectly mixed. In a separate bowl, whip cream and fold into the cheese mixture. The merging is done gradually, in several stages with a bottom-up motion to ensure a soft and airy texture of the composition. Then put the resulting composition in the refrigerator for 30 minutes.
3. Add the rum over the liquid gelatin. Add everything to the previously prepared mixture that has been resting in the refrigerator and mix gently with a spatula. Caution: syrups made from gelatin and rum should not be hot.
4. The final step is to pour the resulting mixture into the cake shell. Level for a delicious look and decorate the cake with mint leaves, lime wedges and brown sugar. Best to decorate just before serving.
