Focaccia with cherry tomatoes and green olives – Method of preparation
It begins with the preparation of the dough, which, although it is soft in texture, is allowed to rise until it has doubled in size.
How to prepare the dough for focaccia
Put the water on the heater and let it simmer gently. In a bowl, mix yeast with sugar until liquid. Add 2-3 tablespoons of warm water, along with a tablespoon of flour, and homogenize the mixture.
Sift flour into another larger bowl. Add the yeast composition in the middle and leave for 10 minutes. Then gradually add the warm water and olive oil and mix the ingredients well. Add salt then homogenize the focaccia mixture. Spread on a baking sheet and cover with a tea towel. Allow to ferment for 40 minutes.
Meanwhile, prepare the ingredients for the topping. Wash the garlic and crush it with salt. Add olive oil and oregano on top. Wash the tomatoes and cut them in half. Also slice the olives into thicker circles.
10 minutes before the end of the allotted time for kneading the dough, turn on the oven at 220 degrees Celsius.
How to assemble and bake focaccia with cherry tomatoes and green olives
When the dough has doubled in size, spread the flavored olive oil all over the surface. Sprinkle olive balls and tomato balls on top. Also coat the tomatoes with olive oil, so they don’t burn during heat treatment.
Place the pan with the focaccia dough in the oven at 220 degrees Celsius for 15 minutes or until the surface is lightly browned. Let the bread cool, then you can slice it and enjoy it to your heart’s content.
