How to prepare eggplant to replace pizza dough
Cut the eggplant into round slices 7-8 mm thick. Lay the eggplant slices on a flat surface, then sprinkle salt on top. Let them rest for 10-15 minutes. During this time, the salt will penetrate the eggplant ring and help remove it from the liquid. This will reduce the bitter taste of the eggplant. Using an absorbent paper towel, press the eggplant round on both sides.
