Chocolate cake with sour cherries. Vlăduț Recipe at Super Neatza, 18 February 2022

We’re used to Friday being dessert day at Supr Neatza, because the weekend is just around the corner, and the recipe prepared by Vlăduț can be used as inspiration for the sweets we want to prepare over the weekend. In the beloved morning show February 18, 2022 issue, Vlăduț surprised his colleagues on set with one of the most delicious recipes for chocolate and sour cherry cake.

Cream cake contains a large amount of chocolate in the proportion of 70% milk chocolate and 30% dark chocolate. The top of the cake is also made of cocoa, and for this to work, the egg whites must foam well, so there is no need to use baking powder. Flour must be sifted together with cocoa, before adding to the composition of egg whites with yolks, as suggested by Vlăduț

Chocolate and sour cherry cake – Ingredients

Even if the ingredients are added in larger quantities, because the cake is also very large, it is not complicated at all, the ingredients are ordinary, which of course you have used in other cake recipes.

Material for top diameter 26cm:

  • 10 medium eggs
  • 10 tablespoons of sugar
  • 7 tablespoons flour
  • 3 spoons of chocolate
  • 10 tablespoons melted butter
  • 1 pinch of salt

For syrup:

  • 400 ml water
  • 100 grams of sugar
  • 2 teaspoons rum essence

For cream:

  • 1 liter natural whipped cream
  • 700 gr milk chocolate
  • 300 grams of dark chocolate
  • 50 gr butter
  • 400 grams of mascarpone
  • 1 pinch of salt
  • 2 teaspoons rum essence
  • 400 gr sour cherries

Cake with chocolate and sour cherries – Method of preparation

It starts with the preparation of the top of the cake with cocoa, which, in order to be cut to perfection, is ideal for preparing the day before.

We start by separating the white from the yellow. Sprinkle salt over the egg whites and stir until foamy and crystallized. We gradually add sugar and mix until we get a strong meringue. Add egg yolks mixed with melted butter, essence, then sifted flour along with cocoa. We spread the composition for the top of the cake in a form that is greased with a little butter. Bake the cake for 45 minutes at 170 degrees, in the preheated oven. Then we let it harden and turn it over on a cooling rack.

Meanwhile, prepare the syrup by boiling water with sugar and adding essence after turning off the heat and cooling the syrup.

How to make chocolate cream

For the cream, we used the classic chocolate ganache recipe.

Heat the cream, then add the chocolate and butter to it. Turn off the heat and mix the chocolate with the heated cream until it melts and we get a homogeneous composition. We set aside 1/3 of the composition to use for the glaze. Let the remaining chocolate cream cool well, then put a mixer in it and cream it by adding mascarpone, essence and a pinch of salt.

How to assemble a delicious cherry chocolate cake from sour cherries

Cut the top of the cooled cake into three pieces. We slightly syrup each piece from the top. We put the first part from the top on a plate and sprinkle half the amount of cherries on top, then spread half of the chocolate ganache cream. The second top follows and we repeat the process. Then we put the third top. Heat the chocolate frosting in a bain marie and spread it over the cake, letting it flow down the sides too.

We can decorate the cake with fresh fruit, nuts, almonds or cherries. Vlăduț decorated it with roses.
