- 280 gr wheat flour
- 225 ml sunflower oil
- 1 pack of baking powder
- 1/4 teaspoon baking soda
- 1 small teaspoon grated ginger
- 1 teaspoon cinnamon
- 1 knife tip nutmeg grater
- 3 medium eggs
- 300 gr grated carrot
- 250 gr brown sugar
- 75 g chopped almonds
- 1 tip salt knife
- 1 medium orange
Ingredients for mascarpone butter cream
- 250 gr mascarpone cheese
- 100 gr room temperature butter
- 150 gr powdered sugar
- 200 ml whipped cream
- 1 lime
- 3 tablespoons finely chopped candied orange peel
First, preheat the oven to 180 degrees. We take two baking sheets that we grease with oil, then we put parchment paper on them. In a bowl, mix baking powder, cinnamon, bicarbonate and flour.
We put three spoons of sugar in a saucepan, and after it melts, we add the walnuts that we cut into small pieces. We cool the composition with the help of aluminum foil, especially so that it does not stick.
In another bowl, beat the eggs with a mixer for about a minute, then add the sugar and mix for another five minutes. We put vanilla essence and oil on top, and at the end we put caramelized nuts and carrots.
We divide the top in half and put it in the oven and leave for 30 minutes. We let them calm down. At the counter we mix all the ingredients for the cream cheese with the help of a mixer, after which we spread everything between the counters, but also on the cake, we decorate as we like, and then it is ready to serve.
