Therefore, in the event of the July 8, 2022 edition, Vlăduț prepared a delicious cake recipe with cherries, apricots and mascarpone cream.
This is a classic sponge cake recipe enriched with lots of fruit and garnished with mascarpone cream with whipped cream where it sprinkles lots of pistachios and adds a row of fruit. Below we offer a complete list of ingredients and the necessary steps to prepare such a cake for the weekend, to please the taste buds of your loved ones.

Cake with cherries, apricots and mascarpone cream – Ingredients
- For the sponge cake with fruit:
- 8 eggs
- 8 tablespoons of sugar
- 8 tablespoons melted butter
- 1 pinch of salt
- 150 gr pitted cherries
- 8-10 apricots cut in half
- For the mascarpone cream with whipped cream:
- 250 grams of mascarpone
- 250 gr whipped cream
- 250 gr spread cheese
- 200 gr vanilla flavored sugar 1 pinch of salt
- For decoration:
- 200 gr chopped pistachios
- apricots and cherries
- apricot jelly

Cake with cherries, apricots and mascarpone cream – Method of preparation
We start with the preparation of the sponge cake with fruit and the first step is to separate the whites from the yolks.

Beat the egg whites that have been sprinkled with salt, then add the sugar little by little while beating strongly with a whisk or mixer. Mix egg yolks with melted butter and cool. Then we carefully dip the egg white meringue into the egg yolk mixture, spoon by spoon. We will mix the composition with a spatula, using circular motions, from bottom to top, to keep it aerated.

We cover a 26/42 cm baking sheet with parchment paper and spread the sponge cake composition inside. We glue the cherries from place to place, aiming to place them with the sides facing up and the opening to go in, so that the juice does not leak out during heat treatment.
On top of the sponge cake, place the apricot halves with the opening facing up. And with this, placed in this way, the juice will remain inside, without dripping into the composition. Place the apricots on top of the sponge cake so that we have half an apricot for each serving.

Bake a delicious sponge cake with cherries and apricots for 35 minutes at 170 degrees, but don’t forget the toothpick test.
Meanwhile, prepare the mascarpone cream. In a bowl, mix the mascarpone with the whipped cream, spreadable cheese, and powdered sugar. Once homogeneous, put the cream in the cold until the sponge cake with cherries and apricots is also cool.
Once cool, spread cream evenly on top and sprinkle chopped pistachios on top. We decorate the cake with apricot halves stuffed with apricot and cherry jelly.

Refrigerate the cake for 2-3 hours, so that it can be divided well.
