To prepare the top, you will need 7 eggs, a packet of vanilla sugar, 150 grams of sugar, 120 grams of flour, 30 grams of cocoa and a pinch of salt. First, preheat the oven to 180 degrees and line a baking sheet with butter and flour or parchment paper. During this time, you will prepare the dough for the top. Combine flour and cocoa in a bowl, then sift through a sieve. The whites will be separated from the yolks and mixed with a pinch of salt until frothy.
The egg yolk will be mixed with both types of sugar until it is light yellow in color. The whites will be poured over the yolks and mixed from top to bottom with a spatula. At the end, add the flour gradually, while stirring gently. The dough will be poured into a rectangular tin measuring 32 x 22 centimeters. How to make orange cream and jelly
As the top cools, you will begin to prepare the cream. It’s very light and delicious. To prepare the cream, you will need 500 grams of cottage cheese, 100 grams of mascarpone, 200 grams of butter, orange essence and 150 grams of powdered sugar. Mix softened butter with powdered sugar, then add cottage cheese and mascarpone cream. The ingredients are stirred until well blended, then added the orange juice. You can use vanilla, lemon, or rum essence. The top will be put back into the tray, then cream cheese with mascarpone will be spread on top. You have to be careful to flatten it very well to get the perfect layered cake.
After that, let it cool while you prepare the jelly. For this you will need 800 milliliters of orange juice, 100 grams of sugar and 60 grams of starch. Fresh orange juice can be used, squeezed at home or purchased from a store. The sugar will be mixed with the starch, then the juice will be gradually poured. The composition will be mixed until homogeneous. You have to be careful not to clump. The jelly will be placed over low heat and will continue to stir until you notice that it has thickened. After that, it will be removed from the heat and the plastic sheet will be placed on top of the pan. When the jelly is warm, it will be poured over the cake and flattened.
