How about an avocado burger for breakfast? The buns can be replaced with avocado halves and the burger insides can be stuffed with hard-boiled or soft-boiled eggs, sliced tomatoes and some delicious caramelized bacon.
Avocados are rich in healthy fats, eggs have protein, and tomatoes give you a decent dose of vitamins and minerals. All the ingredients in this avocado burger are healthy and give you energy all day long.
Here’s how to make this simple breakfast recipe.
Avocado burger – a delicious and healthy breakfast dish
- 1 avocado
- 1 egg
- 1 small tomato
- 2-3 slices of smoked meat
- Half a cucumber
- 2 tablespoons Greek yogurt
- half lemon juice
- 1 teaspoon white/black sesame seeds
- salt, pepper, to taste
- 2 tablespoons oil (for fried eggs)
Fry the eggs in 2 tablespoons of oil. You can make it softer or harder, according to your preference. Then fry the bacon slices until they are crispy. Remove them on a paper towel to absorb excess fat.
Peel the avocado and cut it into two equal parts. Cut the tomatoes and cucumbers into thin slices.
Add the lemon juice to the Greek yogurt and mix. Add salt and pepper to taste.
Place a spoonful of yogurt, cucumber slices, egg, caramel bacon slices, tomato slices and, lastly, another spoonful of Greek yogurt in half of the avocado.
“Cover” this burger with the other half of the avocado and sprinkle the sesame seeds on top. Good appetite!
