Almond cake like at Ikea. It’s even better to make at home
Apart from furniture and household items, one of the reasons to visit Ikea is the famous Swedish meatballs or delicious almond cake. Now you don’t have to go to the store to enjoy this famous dish. It can be done very simply at home.
Ikea Almond Cake Recipe is delicious. It tastes better made at home, if you believe that such a thing is possible. The composition of the cream is perfectly balanced, but you can always add, for example, lemon or caramel. This dessert is made in an 18 cm diameter cake pan.
Here is the recipe.
For the top you will need:
– 90 grams of egg white
– 70 grams of sugar
– 100 grams of almond flour
For the cream you will need:
– 4 egg yolks
– 70 grams of sugar
– 5 grams of vanilla sugar
– 150 grams of heavy cream (preferably, more than 30%)
– a pinch of salt
– 30 grams of sweetened condensed milk
– 130 grams of butter
How to make homemade almond cake. Step by step recipe
Beat egg whites with salt until foamy, then add sugar gradually. We beat until we get a fairly strong mixture. Gently pour in the almond flour in several stages and mix with a silicone spatula. Line a round tray with parchment paper or with butter and flour and pour the mixture into it.
The top is baked in an oven preheated to 170 degrees until it becomes a golden beige. About 20 minutes should be enough. When it’s done, remove it from the oven and let it cool.

Now let’s make the cream.
For the cream, we start by mixing the egg yolks with sugar, salt, vanilla sugar and cream. Mix until a homogeneous mass is obtained, without lumps.
Place over low heat and stir constantly until thickened. Careful! The cream should not be too thick. If necessary, you can strain the cream through a sieve. Add butter and stir until smooth. At the end, add the condensed milk and mix a little more.
Now we assemble the cake.
Cut the top in half and divide the cream into 2 equal parts. Grease each top and side of the cake.
This Ikea-like almond cake isn’t served right away, but is left to cool for a few hours, preferably overnight. Once you’re done assembling, you can let it sit for an hour at room temperature and only then put it in the fridge.
Before serving, sprinkle almond flakes on top and sides.
